Michael Jan Friedman's Legacy has some scenes of Christopher Pike and Vina on Talos IV post-"The Menagerie," but I don't recall if the Talosians themselves appeared in it. I imagine they must have.

I think “Where Sea Meets Sky” by Jerry Oltion from the “Captain’s Table” series might feature some Talosians, as the story is first-person from Pike’s perspective. It’s been over 10 years since I last read it, so I don’t recall whether Pike has any nightmares about the Talosians or not.
The main part maybe, but as I recall the actual bar scenes feature Fleet Captain Pike.IIRC, that one takes place before the events of The Cage from Pike's perspective. So no Talosian nightmares at that point.

Margaret Wander Bonanno did a great job of extrapolating bits of Pike's life from the glimpses that "The Cage" showed us.
