A complete shot in the dark, but maybe they're reshooting to make the movie kind of an "end" to the FOX X-Verse? I know New Mutants is coming out, and maybe Gambit (although I'll believe it when I see it), but as the Disney/FOX merger is becoming reality more and more maybe they're going to tie things up for the main team in Dark Phoenix?

Well, whether it's an 'end' for that universe or not, I'm sure they're doing whatever they can to compress their intended story so that Dark Phoenix (Part 1 of 2) just becomes Dark Phoenix. Like I said before, they don't have time to put out this movie and another sequel behind it and it's kind of hard to sell part 1 if people know part 2 is never going to be filmed.
Normally I'd be inclined to disagree, but, in this case, @kirk5555 might actually be right.
If the original story was meant to have a"Part 2" as hinted at by Olivia Munn, doing extensive rewrites and reshoots in order to change that and offer a satisfying conclusion would be both a smart business decision and a smart narrative decision.

While I would admit that it seems highly unlikely at this point, the rumor mill is suggesting that Fox is going for one last try to get Gambit off the ground.

Apparently the trailer for "Dark Phoenix" has leaked online. No sound though
I know Gambit has his fans, but I just can't see him being enough of a draw to make all this effort worth it.
