Event alluded to by Bryan Fuller.

The Defiant in the MU could be that alluded event; the Klingon victory of the war could take to the refundation of the federation via a treaty kind of thing, and the deconstruction of the starfleet to a non-agressive one.

That way Discovery makes sense to me.
 
Eight years is quite a compressed timeframe for that to happen.

The human xenophobia is a creation of the later shows. It was never in evidence in "Mirror, Mirror".
Although displayed by Archer, it wasn't even reflected in Imperial Starfleet in "In a Mirror, Darkly". Phlox, T'Pol, Soval and Orions and Andorians were Starfleet members.

Well, Soval, and the Andorians, Orions and Tellarites we saw serving in Starfleet in those episodes were slaves forced to work in the enlisted ranks, though Soval was apparently still science officer of the Avenger. T'Pol was a command-department officer with the rank of Lt. Commander, but due to not being human was behind MACO Major Reed in the ship's chain of command.
