We have seen several movies about the TOS and TNG crew, so I have to ask, should they have made movies about the DS9, Voyager or Enterprise crews?

They kinda almost did. In which case it's a shame that they didn't use the idea in the conclusion of the Reeves-Stevens' novel Federation. That's long after the 24th century and if they want bizarre "Klingons" they can easily claim they genetically engineered themselves or evolved or something.The DS9 crew had already directly broken up and it was pretty likely that the Voyager crew would too (and it would be very different without a clear story direction not being in the Delta Quadrant). Plus they had just done so much on television already and completed their stories that it would probably make more sense to try and have new characters and setting.
