Like the kind in this scene? ;)
Just so! And these, too:

Why would the super-cool goose-neck viewer be superseded on the Enterprise, but appear on Mendez's desk?

Actually, that makes sense. Starships, as the envoys to new worlds, containing representatives who desire to impress, would have all the new, shiny, high-tech toys and prototypes. Bases, colonies, and backwater outposts would be lower in the hierarchy and get Enterprise hand-me-downs.

Ever seen a man as happy to be sedated as this guy?

Here's one. Did anyone ever notice that many of the gray elements of the bridge in the 1st pilot are not, in fact, gray, but silver? Yep. And it was a cinematic pain in the fundament, as this excerpt from a 1965 post-mortem memo makes clear:

This whole 20-some page memo is really a fascinating look at the series in its nascent stages. A lot of the suggestions made it, but many others did not.

I always wondered where those landing jackets went. Turns out they were badly made and not reusable. This document suggests a better (but more expensive) supplier, but ultimately they solved the problem by losing the jackets altogether.

Friday's Child...Akaar comes out of his tent. Akaar then kills a dude in a purple sash. Next scene shows Kirk fighting, then back to Akaar coming out of his tent again and fighting the purple sash dude who changes instantly to an orange sash. Then the orange sash dude jumps Akaar from behind. Bizarre.

Watch the episode. Akaar comes out of his tent twice, and the purple sash dude changes to an orange sash dude while Akaar is grappling with him.
