As shown on the show, starship duties is dangerous. Even if you're not killed outright, there's sever injuries, enslavement by the Borg, and just plain old constant fear.
For the average crewmember I think it would be boring after a while, only a select few regularly go on away missions, most labor away inside the ship for months at a time between shore leaves. Never seeing the surface of the exotic planets the ship visit, other than through a window from orbit.
One of the things I thought you saw more of in earlier TOS and earlier TNG was the inclusion of various security personnel and mission specialists on landing parties.
I also assume (head canon alert) that there are a number of random planetary survey missions where different crew mixes are beamed down (see "Ultimate Computer" for example) that are not portrayed in episodes because they are routine.

I always wondered about like on the bridge they are able to observe such and such in screen, boom! The ship rocks to the left!

It's like there are 2/3 of the ship that is not on duty when stuff happens.
So what are they doing and what happens to them?

I always assumed there was a "sign up sheet" where you would reserve a time. I also always imagined seperate holodecks for officers and for civilians.I wonder how long the waiting lists were to use the holodecks. Officers probably had priority over civilians.
