The only kind of finale I'd want is a big, lavish, but otherwise normal episode of the show. I hate series finales that put an end to the whole premise. The worst offender was Xena: Warrior Princess. Great show, awful way to end. That finale even put me off the re-runs, because it left such a bad taste.
DC Comics Annual #2 (first series) works as the perfect final "episode" of TOS, for me. The crew is ending their five year mission and get diverted to Talos IV where the Klingons have taken over...
None of that returning the Earth crap. No "ending". The 5-year mission isn't over yet. Just keep going. Whatever their last adventure, they complete the episode's storyline, then gather on the bridge as always for some banter. At the end, Kirk assumes his dashing captain's pose and just says "All right, helm... on to our next mission. Warp factor three." Cut to space, the Enterprise flies away from camera into the distance, to that wonderful trumpet fanfare they used at the end of Tribbles. Fade out, roll credits.
TOS Kirk beats up Khan who is five times stronger, NuKirk's punches don't even ruffle NuKhan's hair. Who said genetic engineering was illegal in the Prime world????Granted. Maybe it's just advances in film-making that makes it seem so much more brutal now.
Other than against Spock, in TOS Kirk's double-fisted hammer punch (to neck or kidneys), flying double-leg drop kick, and knife hand attack appear to have served him well, preventing his physiognomy from suffering as dreadfully as it does in Abrams-land... pretty much delivering the victory without so much damage.

In retrospect, it's a good thing that TOS didn't have a proper finale. If everything had been wrapped tidily at the end, instead of the series ending abruptly, you probably wouldn't have a generation of fans lobbying to bring STAR TREK back . . . and ultimately succeeding.
"Bring back STAR TREK!"
"Huh? Didn't you see the final episode? They already gave us an ending."
LOL the irony is in STTMP if it wasn't for Decker, Spock and Iliya the ship would have been blown to pieces with Kirk in charge. He added nothing to that mission except acting like a spoilt child 'They gave her back to me' pathetic. Reboot Captain Pike had more class.
Well, that and the overriding decision to fire the photons instead of phasers at the asteroid during the wormhole sequence.
