I've speculated Guinan could be her last name. After all, she refers to nearly everyone on the Enterprise by their last names, even Picard with whom she has some deep bond which goes beyond friendship and family. Maybe the reason she insists on using last names is because she herself prefers to go by her own last name?

Maybe she just doesn't have one, like she's the ST name eqvuvilant of Cher or something.

I do hope an El-Aurian is on the show. They're reality sensitive and in "Q-Who", Guinan raised her hands to Q, as to counter what Q was about to do. I know there's more to them and I do hope one appears in Discovery with some expositional backstory.
