Where were [...] during the Dominion War?

I always wanted to see the Ferengi join the War in some capacity, what with those big Marauders which seemed capable of taking on a Galaxy class ship. I thought the intro to "Valiant" was setting this up. Around the same time Babylon 5 was airing those episodes where Sheridan led that combined alien fleet to liberate Earth and I hoped for something similar on DS9.

That would have been awesome! At least we had a few invovlved, even if not as much as many would have wanted, though it might not have been profitable for them to do so, which is probably why they didn't.

Private Military Contractors! That's an aspect of Ferengi culture that was never looked into, but in a society that wealth-obsessed, there are security guards . At the very least, Ferengi could have been been defense contractors, producing the Federation equivalent of Quonset huts and MREs. (Frankly, the Ferengi are ill-used altogether. I'm going to wager that no DS9 writer ever had an idea for a business....)
 
Those Angosian supersoldiers (TNG The Hunted) would have been handy, assuming they had't all been deprogrammed and cleansed of their bio-enhancements by that point.

For that matter, what about the telekinetic genetically engineered kids from TNG Unnatural Selection?
