Voyager, sorry.... what ? moments.

Seven reveals herself to a pre-"Caretaker" Janeway

EDIT: Or does it all get undone in the end so that none of the stuff pre-launch ever happens?
She speaks to her briefly but she doesn't have her implants visible, she is in a starfleet uniform, and gives a false name. She doesn't reveal herself to be Seven

No, she revealed herself to Janeway at a point in time during their second season, during one of the Kazon attacks.

So it means for about an year, Janeway both knew Kes would leave and a Borg drone would come board. It would explain why Janeway took a huge risk in Scorpion . Janeway must have recognized Seven the first time she saw her on that Borg cube....but temporal prime directive.

No. It was about two years after they first got stranded in Delta Quadrant, must be just before Basics since they were still enduring Kazon attacks.

I concur. Listen to the dialog again. It was during a Kazon attack. It's not pre-Caretaker. On Deck One that was pre-Delta Quadrant.

He said he lived with a woman down on the planet. I assume he adopted the child she was already carrying.

Oh yes, besides he loved this child and the mother so much that he didn't hesitate to disappear in the twinkling of an eye, leaving them behind on this planet without feeling any regret or a very little. No more mention afterward, not even an object belonging to the mother or his "son" to remind them in memory of them...you know, like Janeway/Paris with their offsprings abandoned on another planet, in Threshold. -> It is said that parents always remember the birth of their children but not in this case...

One of the joys of being a piece of sentient software which can edit itself?

Would our dear Doctor have a selective memory? I guess that a picture of a naked Seven must be more interesting than the picture of a woman who shared his existence for several months with "their" beloved son) ?

Was everything we saw up until "Latent Image" the censored version of events the EMH remembered, with all references to Ensign Jetal removed? That was a (admittedly really cool) WTF? moment for me.

In all fairness, he was randomly plucked up off the planet. He didn't prepare for it, he was just beamed out with no warning. Just because he didn't talk about it doesn't mean he wasn't in pain about it.

Where would he have gotten a picture? When he was packing his bags to leave? He was beamed out with no warning, no chance to grab a picture.

JANEWAY: You'll have to spend a few hours each day regenerating in a Borg alcove until your human metabolism can function on it's own

so much for that angle. she began eating in season 4 yet in season 7 still lives in alcove quarters.
