I was wondering if anyone has taken the task of rebooting Star Trek themselves with their own storylines and versions of episodes? I'd be curious to read them.

Back many years there was a website for a series called "Star Trek Reborn" but it went bye bye a few years back, around the time that the JJ reboots came along. It was a very low-tech take on Trek, which focused more on the character drama. It featured season long story arcs, developing the relationships of Kirk, Spock, Bones. Sulu was an older guy with a daughter who was going to take over as XO on Enterprise. It was an interesting shuffling of the characters.
It featured some media to back up the scripts. Like a "fantasy football" cast, using Gabriel Koerner's Enterprise, redesigned uniforms... The show made use of quite a few songs, too. Fiona Apple's cover "Across the Universe" was the title song. I think it featured a little Dean Martin/Frank Sinatra in one of the episodes where Bones is literally tripping out due to an alien device. It was definitely trying to feel like Star Trek with a contemporary twist.
Also, I loved their pick for Dr. McCoy. Gary Sinise would have been awesome.
