Man, was Nimoy green as a director. Looking at the posts in the 1st page of this thread (together with our years of observations in ST3), it seems so many things were designed and made for this movie and didn't show.
@tharpdevenport may have been thinking of the flooring of the Ent-A bridge as it appeared at the end of STIV:

Never noticed the flooring before. I don't know the whole story but from what I understand, it was an incomplete set that they either whipped out or threw together for that one brief scene.

Nope, it was the whole bridge redone with the white walls and movie-era Okudagrams. But the bridge set had been through a lot in the eight or nine years since it was first built for Phase II -- its redresses as the Reliant, Grissom, and Saratoga, and various pyro work involved in TWOK (on both ships) and TSFS (for the auto-destruct). Even if Shatner had been able to re-use that set instead of going all-new for TFF, it would have needed some major TLC.

Yeah, for me the TUC Excelsior, bridge and all, is just gorgeous.
You don't need railings with those huge chair arms holding you in.
The whole bridge? I thought they repainted (and inserted Okudagrams in) only the parts of it that were actually seen in the shot.

Stangely, the Excelsior bridge in TUC always felt smaller to me than the Enterprise one in the same movie, which is very odd, considering they're the same set just redressed!
I think the addition of the large display screen, and the two additional posts to either side, give the rear wall a more cramped feeling.

That's Spock's science station, and the damage control station beyond. I had the chance to ask Michael Okuda about this on his Facebook page maybe a year or two ago, and he confirmed that the whole bridge was repainted, and that he designed new graphics for all the stations.

It makes me wish they had just used this repainted/new graphics stations TMP Bridge as seen in the final scene of TVH for TFF or both TFF and TUC.

Plus the set was being used on TNG at that point as the Battle Bridge and various other guest bridges, court rooms, and whatnot.
This was my first thought when I saw the movie back in the 80s. Even though they may not have been needed due to the big armwrests, (as someone already mentioned) for the sake of the movie it would have added much needed texture and variety to the set.
