A doctor from a non-humanoid species, with literally a hard shell?
That wouldn't be a bad thing.
I can see two options that can ensure the creative freedom and will assure the writers are free to go with anything without looking back:
- post-Nemesis (my pick);
- TNG relaunch of JJ-verse (or basically anything 50+ years after the "new" movies - not exactly utilizing the TNG characters).

Post-Nemesis, but done in such a way that new viewers don't need to know what Nemesis was (or, say, the Dominion War.) Primarily this late so they can both freely redesign the future to fit with 2010 expectations of what the future would look like (PADDs were science fiction in 1987, but now many of us literally own one - go further), but also, should they chose, easily bring back actors from previous shows to reprise parts in guest roles (say, an appearance of Worf not too far removed from Scotty's on the Next Generation.)

I always thought it would be interesting if, for some legal reason, two companies had the rights to Star Trek and each made a series; one in the Prime Universe, one in the Alternate. Sort of like what happened with "Never Say Never Again" and "Octopussy." Or now like the American and Japanese Godzilla series.
I've always wanted a much more in-depth look at civilian life in the Federation, much as the new book Trekonomics does. To that end, I checked off pre-TOS, as I'd like to see a post-WWIII show, or a Romulan War/Birth of the Federation show, to see how Earth unifies and/or how the Earth allies unite and form a government.
I feel like it would be cool to see a non-Starfleet show, or even a non-military show.

Post-TOS/pre-TNG would be of interest. Absolutely nothing from the TNG-NEM era, or anything influenced by it.
While an occasional government episode (or just a reference) would be okay, a show primarily about how the federation government was formed would quickly lose my interest.
This has a lot of dramatic potential.
An early years of the Federation show could be fantastic. Not just set aboard a bunch of starships, but back on Earth, and also shown from an opposing alien society's perspective - like the Romulans. In terms of disassociating itself with Enterprise in some people's minds (not mine I hasten to add), a lot of things could be done. Not least of which automatically come with a production starting again from scratch, redesigning pretty much everything from uniforms to ships, creating new characters and relegating existing ones to the ocassional name-drop or cameo in a future season. Perhaps pushing the Romulan War ahead to the 2160s, as something that threatens Earth's place in an already founded alliance, rationalises a lot of changes they might make. Sure the conflict is pinned to 2156-61 in fanon, and conjecture built up over the years. But it wouldn't be the first part of Star Trek later contradicted by a television episode or film proper.

Now, with the post-TUC/pre-TNG show ruled out by Fuller I am starting to think about a post-Nemesis show taking place somewhen before/during/just after the destruction of Romulus. It could nicely tie to both the prime and JJ-verse. Think of something like the tie-in comic book to ST09, but with different characters.
Anytime after the TNG timeline. I'd like for the new series not to be hamstrung by having to worry about tripping over work that's come before, most notably the way Enterprise had to factor in the entire future of the Trek-verse.

One thing is for sure, it must be after old stuff. Then they are free to do whatever they want
