TOS: Spock, McCoy, Scotty
TNG: Picard, Data, Troi, Spot (a request from Mrs. Blueshirt)
DS9: Bashir, Kira, Quark, Garak (all of them, really; the ones I name can't be separated from how well they play off the other characters)
VOY: Seven, the Doctor, Tuvok
ENT: Phlox
Antagonists: Q, Dukat, Weyoun, Toreth

Yeah Porthos was the best character on Enterprise.

And he was played by the most natural actors in the cast.
