I'd go for gray matter. As in human brains. It's so slimy and so slow. And the SELF INTEREST indicator light is blinking all the time in there.
No Omega matter?
Red Matter definitely.
I have no problem with Star Trek making up its own science. But I hate it when it gets real science wrong. A black hole's gravity is no greater than the gravity of an equal amount of mass at the same distance damn it! Just you can get a whole lot closer to the center of gravity. It isn't magic supergravity like with red matter. A black hole forming at the center of vulcan with only a few kg mass should have had the gravitational pull of a few kg and people should have had ample time to evacuate.
If you want Vulcan to get sucked up make up your own fake science! Don't get black holes wrong!
Especially since the more accurate black hole in Interstellar is so much more amazing to look at.Red Matter definitely.
