Wine Question

Plecostomus

Commodore
Yes, a Mormon asking an alcohol question. Actually I'm just passing it along from someone else: Does Tawny Port have to be chilled before serving or is it supposed to be drank at the cellar temperature (in this case about 55 degrees.)

The person asking inherited about two dozen bottles of local wines and about a dozen bottles of "other stuff" like the Port and some rather expensive import wines.

Tell him not to worry about storage, and just drink it all, like god intended. Preferably in one day. Yeah, that's the way to do it. :D

"Room temperature" is best for ports, bearing in mind that for wines, room temperature really means no warmer than about 65 degrees. So, if it's 55 in the cellar, let the port sit out for a little while before drinking it. And heavens no, don't chill it.

Ok I'll pass that along. Thanks!

Apparently if you are drinking port with friends and one of them hogs the bottle or decanter you are supposed to ask him if he knows the Earl Of Norwich. If he says no, you reply "'tis a wonderful fellow, but he never passes the port either."

...wow, British drinking games are boring! :p

Port's not something I've ever tried, I'll have to give it a shot one of these days.

Port should be at room temperature. But old-fashioned room temperature, not central-heating home room temperature! So if it's been sitting in a warm room, chill it slightly back down to about 18C.

Bishop of Norwich. But yes, that's the phrase. Hardly ever used nowadays, but still fun to wheel out occasionally. :D

The only port I find works well chilled is white port on a summer's evening :) Otherwise the 18C range is perfectly acceptable. Just remember to store the port out of direct sunlight and make sure the cap is secure to minimize further oxidation.

if you want to serve it at the right temperature, you should also use the right sort of glass.

Otherwise, just drink it as you like it best - anything from mulled port wine to on the rocks :)
