Why didn't Starfleet build more of the USS Prometheus?

I just saw the episode with that ship, ep 14 of season 4 and it's a good episode but why in the heck didn't Starfleet not keep the plans and build more of these after the war, they seemed like a really neat ship that isn't your typical Starfleet ship.
 
There were some unnamed ones that were referenced in Prodigy and during the Battle of Procyon V.

Plus there are a number of these ships in the novels and games. I'm part of a ship that is this class in Starfleet International, also.

How do you know they didn’t?
 
Because it seems a design not many people talk about and isn't really shown in other media beyond games

The last time we saw a Prometheus class starship was the series finale of Voyager in 2001. Other than Star Trek: Nemesis which premiered a year after that in 2002, we never saw the 24th century of the prime universe again for the next 18 years until Star Trek: Picard in 2020. In-universe, the time between Endgame (2378) and the start of PIC (2399) was 21 years. I'm sure in that 21-year span of time, Starfleet produced many Prometheus class ships; we just didn't see them on screen because there was no prime universe 24th century Trek on TV at that time.

From what I understand, that was a production error. The flashbacks we see were supposed to have shown the Protostar, not a Prometheus class ship. And this error actually happened twice. I could be wrong about that, though.

According to Memory Alpha's Prometheus-class page, the Prometheus-class appears in:
Voyager 4-14 "Message in a Bottle" and "Endgame" (likely the Prometheus's 2nd appearance)
Enterprise 3-18 "Azati Prime" (Prometheus-class ships are seen zooming past the Ent-J window)
Prodigy 1-16 "Preludes" (Prometheus-class ship cameo)

Not a production error. A Prometheus-class starship presumably made first contact with the Solum after the Protostar accidentally jumped into the future.
By the end of the series, this was replaced with the Infinity and Voyager-A due to time travel shenanigans.
