Why didn't Odo go undercover in the Dominion War?

Neither the Vorta or Jem'Hadar could kill a Founder, nevertheless injure him/her. So why not get Odo to hide out behind enemy lines, and kill as many Vorta/Jem'Hadar as possible? The Cardassians obviously had no supreme loyalty to the Founders, but as vassals of the Dominion had to do as the Founders stated.

The Founders obviously had no qualms about killing all of the Cardassians when the need arose, and perhaps may have eradicated the entire species if the Female Changeling had not surrendered.

Who says he didn't, whenever he'd be available for S.I. to recruit? :)

I believe the DS9 novel The Heart Of The Warrior has him doing precisely that--posing as a Founder to get past the Jem'Hadar.
 
Did you see what happened when he was behind enemy lines for an extended time without going undercover and with people he knew around? And you think Starfleet's gonna want him going undercover by himself?
 
Odo did just that when he and Kira joined up with the Cardassian resistance.
