Why did he always go for the hottest women?
One would think that question would be better applied to Harry Kim.
But seriously, why couldn't he? He's a smart young fellow who seems to think more beyond just his penis length and I think most women would do well landing him, so long as they didn't mind the all-work no-play way of life he seemed to lead.
Secondly..... There didn't seem to be too many unattractive women in Star Trek/The Future to begin with, Maybe the unattractive women at that time are just slim pickings and you gotta make due with what's available.

In the evolved TNG future, I'm sure no person would even think of overindulging themselves in food, and if they did (I'm looking at you counselor chocolate
) they would be able to enter a transporter beam and shave off a few pounds.

Oh well, we do know that thanks to the Zalkonians he finally was able to score with Christy Henshaw.
And most future timelines favor his eventual betrothal to Leah Brahms. There must be novelizations that explore this further.

I know one of the last episodes I seen her in was the one where Q tossed the enterprise off to meet the Borg for the first time. She was rambling on about how many people were killed just like that and LaForge snapped the crap with her.

Praxius, I believe you are thinking of Ensign Sonya Gomez, who made two season 2 appearances. She was famous for spilling hot chocolate all over Picard. and yes, LaForge should have hit that, too.
This other one the OP and I mentioned... was either in season 6 or 7... perhaps at the same time Geordi tried growing a beard...

As for the relationship between Geordi and Sonya, it never seemed romantic to me. It was more of a mentor-student relationship, with Geordi, usually painted as the super-nerd, being somewhat protective of her and steering her away from her own geekiness.
