Why did everybody speak English?

Who says they did? They had UTs on board.

It's pretty clear in DS9's 'Little Green Men' that Quark didn't speak a word of Federation Standard, once his translator broke.

Also, Vulcans and Romulans are probably just what humans call them. We have planets named Mars and Uranus, etc. So why not others named after mythology? They probably call themselves something else.
 
Besides, it ain't English, it's Federation Standard. lol I say. Lol.
Nope. "Bread and Circuses" makes it clear that both the inhabitants of the planet speak English, and the characters are speaking English.

Further, 'Federation standard' has never been mentioned on any of the TV shows or movies ever.

did any episodes use the term "Standard" to represent the language from TNG onward?

Nope. Though people rarely if ever referred to English, so it's possible they were speaking another language.
 
Just watched "The Enterprise Incident" the other night, and the Romulan Commander, in her first exchange with Kirk, made the following comment...

KIRK: We were not spying, Commander!

ROMULAN COMMANDER: Your language has always been difficult for me, Captain; perhaps you have another word for it?

She was speaking English.
