Why are science ships so small?

In my head canon the Oberth does not have a secondary hull. The pod is a scientific tool, a multi function sensor system. The Oberth is the saucer and the undeslung pod can be swapped out for other pods of different type and function.

Yes, this does contradict what we saw on screen in TNG.

In Fairness, Lorca probably would have considered Admiral Marcus a meek scientist.

ROTFLMAO! (I'm old enough to be pre-emoticon! See-V)

How the heck to you even get to the secondary hull if something breaks during a battle on one of those, anyway?

The same way one gets to the secondary hull of a Constitution if something breaks during a battle?

Site-to-site transport, of course. Or the Burnham method of near-suicide.
