He auditioned for Scotty, but TPTB liked his work enough that they found another role for him to play. He's already done filming it. Anybody know any more about this role? Apparently he has a scene with Chris Pine, so I doubt he's playing a Romulan.

I don't see how Simon Pegg is stunt casting. How many people actually know who that guy even is (speaking from a North American POV)? Perhaps he got the role because, oh I don't know, Abrams thought he was the best person for it?
