Sorry, as far as a relationship with a real person I don't see the Doc as something equal to a talking vibrator. It seems like a preversion IMO. Seven is partially mechanized, so she shares that connection to technology with the Doctor. Plus, they both share an outsider status, a struggle to find and maintain a human identity.
I put absolutely no stock in the argument that the Doctor is not "real" because he's not made of meat.
