Just played the trial for Subnautica, was super interesting but I do think that the base building is very clunky and still not very well optimized, every single time I constructed a window I saw a massive and noticeable frame rate drop.
Fallout 3 has a lot of things going for it, but the plot? Really?
I loved that game, perhaps even more than the original one. I loved the little bits of backstory they gave it via computers. Felt like a satisfying sci-fi story. And all the way through, I kept feeling like the developers had great respect for the original.

Agreed. There were one or two obvious errors, but it was clear HR's developers were fans of the original and were determined to do better by it than the awful Invisible War did.
Ugh, Invisible War! Haha. Yeah, the less said about that one, the better. I never played that one, but I did watch a playthrough years ago and was amazed at how much of a step down in quality, not only in terms of gameplay but also writing it was. Human Revolution in comparison felt like the true sequel. There was just so much attention to detail, and the white room near the end with the original theme was a great tribute. I felt the backstory was really great, to the point that it felt like it could be a great sci-fi novel.

Pillars is a good answer.
KOTOR, well, I'd say it hasn't the best plot (although it's competently done) - and I say that as someone who adores the game, it's probably in my all-time top 5.
Now, KOTOR 2, there's a brilliant story - wrapped in a flawed game, but still.
KOTOR 2 suffered from rushitis IIRC. You pretty much have to play it with the mods--that's when the game truly shines. I like Wasteland 2 and Fallout: New Vegas is a good game with all the dlc. Pillars 2 looks interesting. I think I'm going to give a pass on Anthem though--Bioware's a shell of what it was--I don't think they've completely washed the stench of Andromeda (my face is tired...) off yet.
