Probably one of Diane Duane's novels. She introduced a Horta crew member in her books.
I'm sure the Horta crewman was mentioned in Diane Duane's Spock's World because I remember that it was mentioned that they had silicon based snacks for him and for K'tl'k at the reception on board the ship. And I believe there was also a brief mention of the Horta in Anne Crispin's Time for Yesterday when Zar is thinking about the people he has met on the ship.
 
Voted for the Conspiracy aliens, but would've also liked Bynars and Pakleds to show up again (not just background, but part of the plot).

I have read all of the old TOS books. I am only missing most of the more recent years. So it apparently wasn't just one book. :)

Skipping though some of the Diane Duane books again, I know at least where two things I remembered came from. In "The Romulan Way" it was mentioned, that Naraht, the name of the Horta, played meteor to get on a planet. And someone was really surprised, after she stumbled over a "rock", which then spoke. And there was a really funny part in "My Enemy, My Ally", where he helped the crew to escape by eating though a door. But as the door was out of a very heavy material, he asked in between for some time to digest. :D

By the way I generally only read TOS books and none from the other Star Trek series, but I made an exception for your Q trilogy Greg Cox, because I always loved the Q character. Great books! :techman:
