That ship looks like another mid-point between the Ambassador Class and Galaxy class, the first being Andrew Proberts original prototype for the Ambassador, commonly known as the Narendra Class. It looks decent but in-universe this design makes little sense, i mean why build a Galaxy class with a more circular hull and different nacelle pylons? Its too similar to the Galaxy class for me to love it, but as far as the 'Rule of cool' goes.. it does look cool.
The way I've been given to understand it, Orion predates Galaxy by the better part of a decade. She's about the same size as Ambassador, and was used as a testbed for systems integration in the final Galaxy design, just on a smaller scale (Same computers, just 2 instead of 3 cores, same tactical systems, just with less capacity, same warp and impulse engines [again at slightly less capacity], etc). Doing this gave them time to work out most of the bugs in sofware, etc.

In the universe where Orion exists, they would have assumed many of the systems tests that the USS Pegasus did in canon (I never liked the idea that a tiny little Oberth could test systems for a class the size of Galaxy.) The production run could continue that role as test-bed for future modifications of her big sisters' systems, as well as serving as training ships for future Galaxy crews.

Which of the Ambassador-Class is the actual ship seen on screen and not just as a bit of set decoration?

The Sternbach one, seen here:

I had to pick "Something Else"... I've always loved the Ambassador-class Yamaguchi, but I'd rather have a similar design in the scale of the Connie Refit, with the hull textures of the Probert/Tobias Richter Ambassador. It could be ideal as a mid-C24th "Constitution-III" Refit to extend the design life of the remaining class examples...

Aesthetically, the Constitution refit and the Sovereign, I think - top me list.

Excelsior a little lower down. For practicality, the Defiant and New Orleans rate high, as does the Nebula.
The Odyssey-class is also very nice... if a bit hulking.
And the Miranda-class is just an overall very sleek, yet still practical, useful design.

The Sovereign, Galaxy, Constitution Refit, and New Orleans are on my top tier list.
The Sovereign looks sleek and like a sword.
Galaxy is large, bright, and homey.
New Orleans is almost like a constitution…just in TNG style and a little bit wider. Remove the sensor pods, though, and I find it a bit better than what it already is.
The Constitution refit has all those nice retro lines, and it’s very hard to find an angle where it doesn’t look good.

Now there's a deep cut. A very simultaneously Starfleet-looking and not Starfleet-looking ship at the same time.

I always quite liked the idea of "fortress mode." It also helps explain why it looks like it does.

I love the Typhon, I just think it needs to be a bit larger in its role as a carrier. Not the stupidly large version i've seen people try to do, but I feel like it should be more on the scale of a Galaxy-Class.

My main issue with the current implmentation of the Typhon class is the Fighter Compliment.

They claim 28 Fighters only, I'm like WTF?

The IRL Gerald R. Ford Class Aircraft Carrier is half the length at 333-337 M while the Typhon Class should be 800 meters in length with alot more internal volume than a IRL Aircraft Carrier.

It should be carrying 200-250 Fighters, not 28 Fighters.

That's my main issue with it.

Also, give it smaller Attack Drones/Droids to compliment each Fighter.

When I talk about Swarming the target at range, I want to see a literal Hornets Nest worth of Fighters/Drones/Droids harassing a target at distance.

Yeah. Realistically, at it's size it's still plenty big enough.

Starfleet isn't generally big on fighters, so I can kind of see what they gave it a small compliment... even though like alot of Trek ships, there's probably a ton of dead space in there.

Actually, if you look at, the Typhon-class is very "lacking" in dead space compared to most Starfleet vessels.

The only design that is confirmed to have less dead space is the Defiant-class.

Typhon's fighter compliment is likely a result of the transformation mode it has, from 'non-fortress' to 'fortress'. Just looking at that sketch art, a lot of the ship would have to be empty just to accommodate the compressed nature of the fortress mode.

A ton of dead space that you could use more fighters.

Does the Fortress mode really help?

Wouldn't Janeways Ablative Hull Generator be more useful?

Fortress mode can be used more offensively. The Ablative Batmobile armor is just the ship turtling until the threat goes away. Fortress mode is Leroy Jenkinsing into a situation, pulling all the dangly bits in, and firing everything it has in every possible direction for as long as the reactors will allow.
