Perhaps the reason there wasn't any banter between Spock and McCoy in TOA is because they decided to put Uhura into the space that McCoy has in TOS. They pushed McCoy aside in favor of a Spock/Uhura romance

Unlike McCoy, Uhura has a legitimate reason to hang out on the bridge all the time!

McCoy has to hang out on the bridge, because if someone from engineering gets hurt, the bridge is the first place Scotty's going to take him, looking for Bones.

To be fair, that's after over a decade serving with McCoy and knowing where he spent the majority of his time. Had the CMO actually spent the majority of his time in sickbay, Scotty might have taken his nephew there first.
