The Drumhead - best written Trek ep ever IMO.
Chain of Command part 2 - best acted Trek ep ever.

Other eps I like are The Wounded, Sins of the Father, Parallels and The Defector.

Contagion, Where Silence Has Lease or Heart of Glory (lots of Worf back story there).

BOBW for both onscreen and nostalgia reasons.

In terms of what you should watch, the STNG's 6th season episode "The Chase" encapsulates what all of Trek is about, in universe and out.

I am starting a moratorium on watching STNG until the HD versions come out.
