Affirmative Action protects minorities. Should it happen that "white" people become a minority, then they will fall under the protection of Affirmative Action. I believe you will then find much less protesting, for some reason.
As for "people of color", we're all people of color. Better yet, we're all people.

The OP proceeds from a false assumption or three.
First of all, the topic title is wrong on many counts. Blacks—assuming you mean African Americans—won't be in the majority. "Whites" as a "race" will eventually be less than 50% of the population, but that doesn't make them a minority. To be a minority some other single "race" has to exceed them in numbers.
Second, the trick with these statistics is that there are demographic differences between race and ethnicity. Latino is an ethnicity as far as the census goes, but not a race. Ergo, you can be white and latino, or black and latino, asian and latino, or mixed race and latino, etc.
Finally, Affirmative Action programs were designed to combat systemic and institutional discrimination, something that would be unlikely to be applicable to any group that was the majority but falls out of being same, especially in a country that is increasingly mixed in terms of race and ethnicity.

Whites being a plurality is not the same thing as someone else being a majority.
Overcoming hardships imposed by institutional racism is not the same thing as overcoming population deficiencies.
Affirmative action exists because institutional racism led to severe disadvantages for groups. Other groups who have overcome these disadvantages are rarely the benefits of affirmative action. For example, Asian American populations are generally not given preferential treatment because they will likely be successful at getting into College solely on their academic performance (although I don't think academic performance should be the only factor in determining who would be beneficial to a University).
On a side note, I do think it's somewhat of a problem that the majority of affirmative action programs seem devoted to the concept of a black/white racial divide. There are other groups in this country who have been victims of discrimination for an equally long time and are still suffering the consequences of these historic or ongoing events without usually benefiting from affirmative action or diversity programs. You rarely see efforts to increase the number of Native Americans in Universities, for example, even though the destructive nature of our past treatment has led to serious problems involving lack of opportunity on reservations. There is also a general indifference to overcoming the effects poverty have had on school systems that prevent many who are willing to work hard from ever achieving meaningful success (especially as the importance of higher education in the employment field rises).
It's also worth noting that many affirmative action programs will likely be struck down next year when the Supreme Court hears the next case on this issue. They're not likely to say all of them are unconstitutional, but they will make it significantly more difficult to implement such a program.
