I always imagined that Kirk was mirroring what a lot of execs back in the 60s could identify with — signing off on a written transcription of his log entries done by one of the girls down in the "typist pool."
On a similar note, I'm greatly amused by the trope used to depict when Picard or other late era captains had a lot of "paperwork" to get through — a desk cluttered with multiple PADDs. It would be the equivalent of having a bunch of emails to read, and having each one open on a separate iPad.
