I'm a sucker for Oh Holy Night -- such a powerful song. Little Drummer Boy is second. Maybe 12 Days of Christmas is third.
 
I fell like for holiday music, you can't beat the classics from the 1930's-1950's...not sure if that's when they were all written, but the great crooners made em shine:

Silver Bells
Winter Wonderland
I'll Be Home For Christmas
Home For The Holidays
White Christmas

Doesn't get much better than that!
 
Once in Royal David's City is my favourite carol. These days I don't get to hear carols much. It's a shame because I love a good Christmas carol service.
 
O Holy Night
Little Drummer Boy/Peace On Earth
Winter Wonderland
Silent Night
Happy Xmas (War Is Over)
 
O come, O come, Emmanuel is without a doubt the most beautiful and powerful Christmas hymn.

The Holly and the Ivy's a nice one too.
 
My favorite would have to be "Hark, the Herald Angels Sing" because of the depth of the lyrics and the fact that it always makes me think of the end of It's a Wonderful Life.

I also like "Angels from the Realms of Glory" because it's really fun to sing lines like "Sages, leave your contemplations."

Gloria in Excelsis Deo (or whatever its proper name is), because of the fun you have singing the Glo-oooo-ooo--ooo- ria bit and stretching it out as long as humanly possible. Oh, and O Come all ye Faithful, because you get to shout the "come" bit really loud. Can you tell I really loved my old school carol concerts. :)
 
As Mannheim Steamroller performs them:

- Joy To The World
 
My favorite one to sing was always Good King Wenceslas. Carol of the Bells and Masters in this Hall were always fun too.
 
When I was a kid it was It Came Upon a Midnight Clear. Now it's In the Bleak Midwinter.
 
"O Holy Night"--but only in the hands of a talented singer.

I never thought much of it until I heard it sung one year by a soprano-in-training, who was living with us in residence. It blew me away.
