Were there other Enterprises between the NX-01 and the NCC-1701?

I agree in that it makes way more sense for the Kelvin timeline to be a complete, always existing parallel universe that the red matter tunneled into, and solves a TON of problems with the rest of the franchise.

We know that time travel can work either way. In DSC, Burnham was able to time travel and directly interact with Past Burnham via the Red Angel. There was no splinter timeline, it was one single timeline. We ALSO know there can be branching timelines, that either replace an existing timeline or establish an alternate universe.
Just watch Voyager's "Relativity" and realize that multiple timelines can exist and then be edited down to one.

And that will make your head explode.

What problems? They goofed with Chekov's age, that's really about it.

Actually, if one wants to play devil’s advocate, it’s entirely possible that KT Chekov isn’t the same person biologically as PT Chekov. Since Nero’s incursion happened before PT Chekov was even born, there’s a possibility that the timeline change even affected minisicule things like when Chekov’s parents decided to have a kid. I always found it telling that Anton Yelchin looks nothing like a younger Walter Koenig, while the other cast members seemed quite similar-looking to their TOS actor counterparts. Also, PT Chekov was never a Wesley Crusher-like whiz kid like KT Chekov.

That's a good point. I don't know why it never occurred to me that the Kelvin destruction also possibly affected Chekov's birth date.

So yeah, dispite what @Phoenix219 might think, there really aren't any issues with connecting the pre-2233 Kelvin timeline with the prime.

Well, I’m not sure Pike should have been as old as he was in the film, but is that evidence that the timeline changed both ways? No. James Cromwell’s Zefram Cochrane should not have been as old as he was in FC, but he was definitely supposed to be the same guy as Glenn Corbett’s Cochrane.

It’s called ‘artistic license,’ not a changed timeline.
