Do we have a definitive number of people killed on voyager when the caretaker cast them across the Galaxy?

It had a crew complement of 141, but this was boosted to 153 with the Maquis, plus Kes and Neelix.

I think the Valjean had a surviving crew of 30 or so. So, the total number of initial lost would be around 20 Voyager crew, plus however many died on the Valjean.
 
Because those deaths were replaced by outsiders.

Death of the first officer made room for "Native American but has the shortest hair on the senior staff" Chakotay.
Death of the Betazoid helm officer made room for Tom "definitely not Nick Lacarno because despite taking a bullet for his teammates Lacarno's irredeemable scum" Paris.
Death of the chief engineer cleared the way for B'Elanna "hit your superior, get promoted" Torres.
And the death of the entire medical staff made room for the "how hard is it to just pick a frickin' name for yourself" EMH. As well as "two years old and very very VERY precocious" Kes as his nurse.
