Such designs date back to at least Interplay's Star Trek: 25th Anniversary. Fortunately, this picture is missing the fugly drop-down deflector dish that the game's almost-Miranda had!

Oh, earlier than that, assuming you're not limiting it to CG renders. Fan blueprinters came up with the Surya and Coventry classes as TOS-era "predecessors" of the Reliant very soon after TWOK came out, certainly no later than 1987's Ships of the Star Fleet.
