Would something like a "Trek Novels To Screen Anthology Series" be feasable? Would CBS want to do that? And how could it be realised? How should the novels be selected and adapted? Best case of course: Together with their authors. I assume the only really possible way would probably be an animated show (CGI or traditional).

I'm sorry if this seems clueless, but I don't understand at all what you mean.
Do you mean books that have been adapted into episodes in some way? (The Wounded Sky to Where No One Has Gone Before)
Or books that provide inspiration for writers of the show? (The Final Reflection inspiring the development of Klingon culture).
A collection of novels that should be adapted to screen, in the opinion of arbitrary deciders?
What does "Trek Novels To Screen Anthology Series" even mean? I don't understand what that means as a project. At the very least, can you outline what the project is supposed to be in some more detail. I almost think this could be interesting, but the lack of clarity of the concept just leaves me feeling confused.
That seems clear enough from the sentence "How should the novels be selected and adapted?" What's being suggested is a TV series adapting novels into episodes, or maybe season arcs like The Expanse.
Oh, like the way the American Horror Story show is an anthology show, which each new season being an entirely different story, with all new characters in different situations? I seem to recall there was early speculations and rumors that the all-access Trek series were going to be that way, too; with Discovery being a one-season show, followed by something completely different. Now I get it, I think. Thank you.
That actually does sound like an interesting idea, athough as other posters have said, it sounds very unlikely. Fun for speculative "Which books would be great for it" posting, but it would never actually happen.
In a way we kind of had that with the 2009 Star Trek film and it’s sequels where the producers said that the took parts from their Favorite novels and put them in the script. The whole plot for “Into Darkness” concerning Admiral Marcus and his dreadnaught starship was an adaptation of the 1986 Diane Carry novel “Dreadnought!”
Superficial similarity does not equal adaptation.
I can’t imagine why the showrunner or writers of the source materials wouldn’t prefer creating new stories if so many other showrunners and writers were allowed to. Even Game of Thrones (through S5 or so) and Outlander feel thin and predictable if the viewer has also read the original novels. A number of DC animated movies come across as comic commercials, a way of getting you to read the underlying books and then hopefully other comics as well.
I mean, sure, there are classic movies which (often loosely) adapt great novels in interesting ways, but in that case these adaptations would have to be rather innovative with a strong focus on the target medium, not just conversions for the sake of getting fans to read more tie-ins.
