For sheer comedy's sake, I'd love to have seen "How Much For Just The Planet" as an episode or two. I can just see Shatner standing, arms spread wide out yelling "Someone give the captain a pie!" and then see the dozen or so pies come flying in on Kirk. LOL!! :guffaw:

I imagine the moments I'd best like to see onscreen are those which would be FX-driven and visually impressive, like Ring around the Sky or Orion's Hounds. Alien landscapes or massive space battles, all rendered in smooth CGI... :drool:
I'd never really considered the filmic possibilities in the Ring, but now that you've mentioned it, I can imagine the camera pans. :)

I have simple tastes. The only moments I would've wanted to see on the big screen is the entirety of "The Ashes of Eden" and "Federation" (though I love the whole Shatnerverse, I'm not conceded enough to think the post-Return books could've been movies).
Of course, for me, the more accurate expression is "which moments would you like to have seen in movies," since the new one will be the first that I get to see in the theatre.

What definetly needs to be turned into a movie would be Vanguard, that would an awesome series of movies, especially the third one. (Reyes "Glass it!" -order, T’Prynn collapsing after the death of her lover)

I've definitely thought there were great visuals in that series. I remember picturing in my head the scene in Summon the Thunder where the Klingon colony planet (Palgrenax?) explodes as if it was on a movie screen.

Serpents Among the Ruins would have made a Hell of a movie.

For TV episodes, I'd give real money if I could trade Q-in-Law for, say, Q-pid, if only for the following exchange:

Riker: She's really beating the stuffing out of him. What do you think we should do?
Worf: Sell tickets.

For movies - yeah, pretty much all of Federation, and Final Frontier as well (I still think that one could have been a really decent Star Trek TV mini-series). I'd also love to have seen Crossover made as one of the Next Generation films.
