It's been years and years since I read them but my favourite novels featuring McCoy prominently were Doctor's Orders (his exchange with a Klingon commander is priceless), The Romulan Way (I've always liked the back story given for the Romulans in that one) and Dreams of the Raven (which, along with Bloodthirst, makes for an excellent Halloween/horror feel).
