Thanks everyone! Here is what I gathered as the "should see list" from TOS, sorted by most points first, then alphabetical:

...or probably anything from Season 1 or early Season 2.

Episodes that were warned about and the warning wasn't disputed:

Depending on the age, and I'm assuming here that she's fairly young, I don't think it's that easy a task. Needless to say, one has to eliminate the "children's" episodes, Miri and the Blob That Ate Cleveland, uh..Children Shall Lead. I think I would vote for Who Mourns for Adonais (perspective and discussion of Earth mythology and ancient cultures) and Court Martial (introduction to legal matters, lots of books, and basic man. vs. machine dynamic), despite the sturm und drang of the finale.
