If canon can be so shamelessly disregarded in favor of flashy whiz-bangs and falderal, then why keep ANY of it?

Does Star Trek = canon?

Does canon = Star Trek?

Does warp drive = Star Trek

Does front wheel drive = Star Trek?

If canon is not a necessary component, then why not have NewspeakSpock do the Vulcan Nerve Pinch to finally subdue the doubleplusungood Kirk on his thigh, activating the pudendal nerve? Sounds flashy and cool to me.

Why use the SO cliché NECK pinch?

Why not just use a flashy new MARPAT inspired bridge-camouflage uniform, scientifically designed to make the user appear to be a harmless superfluous viewscreen? Nah, the conspicuous jackboots would just give em away anyway...

Why use shuttles which bear a strong resemblance to the ubiquitous Galileo Class F shuttlecraft? Why not create some great Fast & Furious inspired shuttlecraft with multiple rear spoilers and instant boost "NOS"ish power adders to blast them about? I mean, "This isn't your grampa's BuickTrek now is it sonny!?"

As long as we keep the breakneck pace and nonstop furious excitement rolling, who cares about canon when this stuff is so fun!?
