They still happen. I mean look at it this way.
The Trek universe happens as we know it and then AFTER Nemesis Nero and Spock get thrown back in time.
From this perspective, Trek XI is a sequel to Nemesis. And thus as a viewer, a fan of the franchise you see it as:
All of trek happens
then spock/nero are thrown back in time
their actions alter the past
the "new" past plays itself out.
I mean look, Star Trek IV mostly happens in 1986 but we don't see the 1986 segment as happening "before" TOS.
But in the end we are very lucky. The movie, with all of its changes is still very much canon and very much within "our" universe. Regardless of time travel/newly altered past and so forth. It is still our Star Trek, our universe of Trek and can easily be placed alongside the rest of the franchise.
Most people when trying to bring back a dead franchise like this would completely reboot it ala Batman Begins or Battlestar Galactica.
The fact that Abrams and the writers put so much work into making sure that the film still makes sense in the larger world of Star Trek and fits in, just for us the fans is a miracle. We are very lucky to get that, it could have far different.
I just have to say... Star Trek is fiction... Like, your DVD's will still have moving pictures with sound and such. They can't make them go away. Those are yours.

Few were paying attention though, (some still are not) instead, distracted by the whole; 'this overwrites everything which came before and if you don't like it; tough' or the, "it rapes their childhood", shticks.

I have yet to see in Star Trek where time travel creates parallel timelines if the past is altered.
If that is the case, then, well, the "real" timeline has been lost ages ago, with parallel timelines of parallel timelines of parallel timelines....
That does not seem consistent with the way time travel is shown in the Trek Universe and Nero/Spock don't have some sort of magically different universe changing time travel experience in Countdown, just a regular old Trekky thrown-back-in-time thing.
If you "can't change the past", then that does not explain how Starfleet was gone due to McCoy going back to the 30's or Earth being totally Borg due to the Borg time traveling in First Contact. The past CAN be changed as shown in Star Trek so far.
