The ship was a write-off with all aboard killed. That's enough to qualify as a destruction.

In retrospect, this death is cheapened a bit by it's replacement being the exact same ship a few episodes later.
I wish they would have been given a different class of ship as a replacement, maybe a severely upgraded Nova or something.

It was necessary given how much of the final battle in WYLB was stock footage. Besides, both Dogs of War (the episode introducing USS Sao Paulo/the other Defiant) and Equinox Part 1 (the episode to introduce the Nova class) aired on the same day. It's possible no one on DS9's writing staff was even aware of the Nova class and therefore would have no reason for bringing one into the show.
