Trying to pin the sin on one VOY character I found tough for all the reasons others already mentioned. But my seven would be:

Wrath - Janeway
Sloth - Chell
Gluttony - Kes (Elogium)
Lust - Tom
Pride - The Doc
Avarice - Seska
Envy - Kim

Then I realised Janeway's displayed most of those at one point or other. Night is good for Sloth, and Fair Haven (eek) for Lust. And she's definitely a glutton for punishment. Only Avarice and Envy a little trick to pin down. Any suggestions welcome

If we're going to pin Janeway for Lust, I'd say that it's because of "Counterpoint" more than Fair Haven. That episode just oozes sexual tension.

I never understood why lust is. Surely it's what you do with the lust that's a sin?

I am not sure. There can be several reasons. First: the whole thing about deadly sins is a medieval idea. Sexuality was not exactly liberal. And Wiki sais originally these "thou shall not"-rules applied mainly to monks. Second: I think the word "lust" today has slightly changed its meaning. Today it is more related to joy, in a physical way as well. But then it was more about uncontrolled desire in an immoral sense and with that often the cause of breaking rules.
