Deleted scenes from the film apparently show the Narada and its crew being captured by Klingons after the Kelvin blows up. So did the Klingons adapt the Narada's future technology for themselves? I have difficulty imagining them just locking it away somewhere for 25 years and never taking a really good look at it.

Orci & Kurtzman are probably going to speak their mind on this via the new Star Trek: Nero comics.
By the end of the first issue the Klingons already have the Narada in orbit around Rura Penthe and are bragging about all the advanced technology they will get from it.
Perhaps we'll see something about it in the next movie, if Klingons are included in the story, perhaps not.
It was a federation simulation. Maybe they don't know about the new advanced Klingon ships yet. Maybe the Klingons are keeping them top secret and out of sight.
Maybe the Klingons haven't managed to fully integrate the new tech with their designs.
Maybe Nero destroys the facilities that study the Narada tech after escaping to prevent it from being used against his people.

IMO Nero was pissed as it was. If they got captured by Klingons, of all people, he would have gotten the Narada out of there as soon as possible, probably before said Klingons would have time to study the technology (and would've made a point to blow the Klingons' heads off).
Kirk Sr. wounded the Narada which was why it didn't destroy the shuttles, Nero couldn't do anything to stop them.
