“The Cage” gave a nod to the idea that landing parties likely often need specialized gear. In “The Cage” they had backpacks that disappeared when the series went into production. So did the field jackets. The tricorder seems to have replaced whatever was in the backpacks.
The loss of trousers on women was nonsensical. If you’re going down to an unknown environment wearing trousers makes more sense than wearing a skirt with exposed legs.

Field jackets returned in TMP and variants were seen throughout the films. TNG and DS9 had some sort of alternate wear, but they weren’t field jackets like what we saw in “The Cage” and the films. The ones seen in later Trek looked more like an alternate fashion for duty wear.
