I think it's natural for someone who lives for thousands of years and comes from a completely different culture to stand out amongst contemporary humans - that's what makes the character interesting.
I also don't mind him cracking a joke or one line occasionally.. he is a warrior after all and known to party hard and enjoy life after a good fight but i just feel Thor 3 swung too hard into the comedy corner and it didn't feel natural or fitting.
However i do love his storyline in the Infinity War movies, especially when you consider what he's been through in the last couple of movies (lost his mother in front of his eyes, his father died, his adopted brother was killed in front of his eyes as well as his best friend, his home got blown up etc). It was done in a more comedic way by turning him into fat Lebowski but ever once so often his pain came through and only by the end of the movie did he work through it and was ready to take life into his own hands again (and join the Asgardians of the universe
- god i so want to see Guardians 3 with Thor annoying Quill constantly).
Because him spending many years with humans, interacting with them, picking up from them, couldn't evolve/change his personality at all. Nope. Not a change. Thankfully, in real life, people remain the same forever.

But, seriously though.... Thor already went through a development as a person in his first movie. Did people really expect him to remain the same?
Fat Thor was awesome.
It would be cool to have a super hero without an sixpack.
Hemsworth actually fought to keep FatThor throughout Endgame. Originally, he was supposed to go back to SlimThor after the timeheist, but Chris didn't like the idea that Thor feeling good and worthy about himself again needed to include a toned body. To him, it portrayed the idea that being happy means not being fat. And he didn't want to give of that vibe.
Characters hard-turned into complete comic relief / slapstick (when they were not that way at all) is not natural or beliveable in real life. Thankfully in real life, people are not wrapped up into being nothing more than a 10 minute quip / stumbling session.
It's already been observed by several people that Thor's humor was already in development in Age Ultron, and when watching Thor and Dark World, you can clearly tell this is a man who enjoys a good joke. His evolution as a character wasn't hard turned. His sense of humor changed. You don't have to like it, but it did happen.
As for people not being 10-minute quips/stumbling sessions.... Let me introduce you to some people I've known over the years.... You'd be surprised why people might use humor as armor or even a weapon, to hide feelings. Like Thor appereantly did, as evident from his dialogue in Infinity War, where he quipes his way out of his talk with Rocket when things become a bit too deep.
The problem with Thor is that without humor the character is a plank of wood. Maybe it works in the comics but it makes for a dull experience at the movies, especially when he's the lead rather than a straight-man or something. I think they did take the humor over the top in Endgame, and way too meta by actually calling out Lebowski in-universe, but I think the MCU Thor needs to embrace his peculiar brand of humor going forward.
I hope we do. Fat Thor was amazing, for once I was able to say I have the same physique as Chris Hemsworth and not get weird looks. They need to keep Fat Thor.
I counter that with the idea that Thor--as introduced--was already planned to be part of a larger CU, where he would eventually appear with other superheroes. With that in mind--like the comics--Thor having a distinct personality that was more self-involved (in a regal sense) than Stark, Cap, Natasha, Clint, Fury or anyone else, always gave him his own unique identity. He was not exactly "one of the guys" (Earth guys, that is), because he was not. He tried to relate, but his ways were still unlike the average human (e.g., the diner scene in Thor, for one). Contrasts--often times large contrasts--add flavor to a film universe.
Thor's personality in Ragnarok was a major shift from any of his behavior in AoU--practically night and day, and it felt forced. On that note...
The genie is out of the bottle; they will never tone down that which you thought was over the top in Endgame. If Thor was fat/drunk Thor with the level of everything going on around him in that film, its not hard to imagine he will continue to be the same type of character going forward.
Didn't Thor had a funny comment in the first Avengers.

*All* of the Thor movies featured a certain degree of silliness, including with Thor himself. The only thing that's really changed in that regard is that the balance of absurdist comedy and Shakespearean drama has shifted much more heavily towards the former than the latter.
Most of the comedy always came from how utterly ridiculous Thor (and The Warriors Three) look and acted while taking themselves utterly seriously. The rest was mostly Darcy reacting to it all, Jane repeatedly running Thor over with her Jeep, and of course the classic Coulson deadpan.
I get a lot of people hated Darcy, but personally I felt she was one of the more entertaining characters in both movies, second only to Loki. I was actually disappointed they didn't even give her a small role in Ragnarok as the tone of the movie would have been a perfect fit for her character.

Hear, hear for Darcy love! I always loved her character and I, too, wish she was in Ragnarok in some form.
Marvel probably had no intention of bringing her back because some audiences found the character annoying, or reminded them too much of Dennings' character on her sitcom.
No, it's simpler than that: she was there to play off of Portman, and with Jane Foster out of the picture, there was no good narrative reason to bring her back.
