...As for redoing things that actually affected the plot, I think they almost managed to steer clear of those. But they did replace the scout ship of "Friday's Child" with a standard battle cruiser, which made it rather weird that the Klingons would choose to flee when sighting the Enterprise. With a big ship, one'd certainly expect them to stay and posture, which is what their surface agent did (if only because he originally was stranded when his small ship had to flee).
They also fixed at least one thing that wasn't merely aesthetically awkward but actually broken: the chronometer on the bridge, the one where the minutes rolled at the 59 second mark, not the 60 second mark.
