I will be on East coast server, I'd recommend a PvP one. Yes you get flagged for PvP in most instances, but I'd say that hardly happens (have only been on 2 Imperial controlled planets and Nar Shadarr so far yet though where no Republican players were in sight).
I'll probably play a bounty hunter, reproducing my beta character which I like a lot, and a Jedi on light side.

And what if you want to change your playing style from PvE to PvP? Would that involve creating a character on a different server? In the old days that was called PlayerKiller mode and it was a option that could be switched off/on.

So far no server moving is allowed. However, Bioware has said that when the Oceania servers come online (probably March) they are going to allow those players to switch. Some have speculated that, as a gesture of "fairness," they may allow others a one time chance to switch, also.

As for PvP/PvE, as Timelord suggested, the OWPvP is very limited ATM. It exists, but I've hardly seen anything. I didn't see anyone on Nar Shadaa, killed an Imp on Tatoonie, and got ganked once on Alderaan. So, in three zones, I've only seen two players of the opposing faction. I'm actually really disappointed about it. All my friends are on PvE and I'm considering just rolling there and playing with them--at least for the foreseeable future.

In terms of the PK, PvE servers do allow for optional flagging. I have no idea if anyone actually does it or not. From what I've read, pretty much all of the PvE PvP action is in battlegrounds only.
 
Rarely seeing members of the opposing faction on shared worlds likely has to do with how those world maps are set up, based on the overarching situations in the story.

My Imperial Agent is level 31 and cooling his heels at House Thul on Alderaan while I level up a Jedi Knight - who is now level 32 and is en route to assault House Thul.

From what I've seen of the Nar Shaddaa, Tatooine, and Alderaan maps (though to a lesser extent in the third, because I've seen less of it compared to the other two), much of each faction's content takes place on more or less opposite sides of the world maps. The shared areas on each map seem to be generally a rather small portion of the map, based on what I've seen so far.

As far as the PVP flag on PVE serves go, I'm not a PVPer, but I have ended up with the PVP flag on by accident and through being healed by another player who did have the flag enabled. Due to the ridiculously long time it takes for the flag to wear off (I'm talking hours here, instead of the 10 minutes that the knowledge base claims), I've actually been somewhat glad I rarely see opposing faction players.
 
PvP on Hoth is psychopathic, at least on my server. It's to the point where you have to team up with friends just to take care of the basic quests.

I mean, I know it's a PvP server, but I've never been ganked so much in my life.
