I was reading through the excerpts in the back of the ebook version of Survivor's Quest, and I was wondering, do they have different excerpts in the back of different books or are they all the same?

They're mostly different - I think that they all have the same excerpt for the New Jedi Order (Vector Prime), but the others vary.

The first six books (the Jedi Shadow and Jedi Sunrise subseries in the Shadow Academy story) of Young Jedi Knights are pretty good. I haven't ready any of the ones following those six, or the Junior Jedi Knights series with Anakin Solo and Tahiri Veila.

I haven't read the Junior Jedi Knights books, but I want to just so I can see where Tahiri came from.
