So what the hell exactly HAPPENED to the Falcon between Solo and A New Hope?

They seem to be at least trying to do that with The High Republic, and the TV shows.

...and then the very same people asking for something new complain that the new thing isn't actually what they wanted, and why can't it be like it used to be?!.
I've been on this particular fandom merry-go-round before! ;)
 
One, why would Han care? He isn't trying to impress on looks but speed and reputation. Two, having a nice ship was him and Qi'ra's dream. That dream was shot through the heart, as surely as Beckett. Why hold on to nice things when they'll just betray you?
But if me and an ex-girlfriend (who left to run a crime syndicate ;) ) dreamed of one day having a super nice BMW, then I won a Nissan Altima in a poker game, I'm not going to let the Altima look like shit because it's not a Beamer. I'm going to keep that Altima looking as clean as possible (washed, waxed, vacuumed) until such a day comes as it gets wrecked, keyed, or stolen.

*Disclosure: I'm not in any way saying a Nissan Altima is a crappy car. I drive one and love it :)

That rather misses the entirety of the point. And Han eventually adopted the attitude that the beat up look worked better and he left that dream die. That's the whole point. He became more cynical because of the betrayals back to back.

I say this will all due respect and in no way mean it to be an insult, but...you ain't Han Solo. ;)
 
Chewie had a bad flea infestation one time, so the Falcon had to fumigated. Solo hauling loads of Jabba's spice over and over made for a dirty used ship. Either way, it was a working man's ship, used and abused, but still well-loved and cared for. Lando's 2001 like Falcon was creepy, especially those yellow seats. I always saw the Falcon's seat pads as tan anyways, with cream tan square wall panels as well. Either way, seeing George Lucas's 1977 Falcon was like a dream come true. The Sequel Trilogy never should have messed with the Falcon both inside and out. The dimensions kept changing. ESB's Falcon full sized model was perfect, the cockpit was bigger, and Ford's suggestion for flight control yokes was perfect too. It's too bad Lucas didnt digitized the control yokes into Star Wars 1977 too.
