Since its Star Trek 12 why not have a Simpsons nod?

It would be cool, and it only needs to be sutle, for example at the end of the film after days without sleep Kirk says "im going to get some sleep, im so very tierd" or something like that?

That's always been my favorite quote from that scene, primarily because that's how I felt at the time, too. Consider: we had five straight movies where our heroes had to deal with the Klingons as antagonists in some way, shape, or form. Yes, even the whale movie!
